Sandbakkelse

Makes 4 dozen cookies

 

 

Ingredients:

2 cups

Flour

1 cup

Ground almonds

1 tsp

Almond extract

1 cup

Sugar

1

Egg yolk

Directions:

1.       Set out sandbakkelse tins on cookie sheets

2.   Cream butter.

3.   Add sugar and egg yolk.

4.   Beat well.

5.   Add flour, almonds, and almond extract

6.   Mix until dough does not stick to bowl, adding more flour if necessary.

7.   Press dough into tins beginning at the bottom.  Keep the dough layer about the same thickness in all the tins.  Too thin, and the cookies break.  Too thick, and they don’t cook through well.

8.   Bake at 350 degrees for 15 minutes.
