Quick corn bread for
chili makes 9 servings
Ingredients:

1¼ cups |
All-purpose flour |

¾ cup |
Corn Meal |
|
¼ cup |
sugar |
|
½ tsp |
Salt (optional) |
|
2 tsp |
Baking powder |
|
1 cup |
Milk (skim) |
|
¼ cup |
Oil (olive oil recommended) |
|
1 |
Egg (or 2 egg whites) |
Directions:
1. Heat oven to 400.
2. Grease 8 or 9-inch baking pan.
3. Sift, combine and mix dry ingredients.
4. Combine and mix wet ingredients.
5. Stir wet ingredients into dry ingredients until all dry ingredients are moistened.
6. Pour batter into prepared pan.
7. Bake 20-25 minutes, or until light golden brown and wooden pick inserted near center comes out clean.
8. Serve warm.
